Behind the Box: Marshmallow of the Month

Eleven years ago, Saidah Farrell found herself stuck in a dead-end job. Looking for a career that she loved, she “began studying culinary arts at a local community college,” she says. Ultimately, Chef Farrell wanted to open a bakery of her own. “After graduating, I began selling my baked goods, marshmallows, and graham crackers at local farmers’ markets.”

Though Chef Farrell saved enough to open a bakery storefront, the business did not last long. So, temporarily, she put her entrepreneurial goals on pause. “I took some time off from my own ventures and began teaching culinary arts,” she says, incorporating entrepreneurship into the curriculum.

Then, Chef Farrell was approached by the owner of a subscription box, who was interested in ordering her s’more survival kits. This was the first time Chef Farrell had heard of the subscription box business model, and the wheels started turning.

Marshmallow of the Month launched in August 2019 and has been a bestseller ever since. And no wonder! Homemade marshmallows by a pastry chef? Yes, please.


S’more d’Oeuvres

Every month, you can make s’mores with your Marshmallow of the Month Club... or you can switch it up and make S’more d'Oeuvres!

Ingredients*

  • 2 graham crackers

  • ¼ Tbsp butter

  • ½ oz chocolate (one of your monthly chocolates)

  • 1 jumbo marshmallow cut into 6 pieces

Directions

  1. Use a rolling pin to crush your graham crackers into dust.

  2. Place crumbs in a silicone cupcake liner.

  3. Add butter, then microwave for 15-20 seconds until butter is melted.

  4. Shape the mixture in the liner to form a crust.

  5. Place in the freezer to set.

  6. Melt chocolate in a microwave-safe bowl until it melts. Microwave 15 seconds at a time and stir after each interval, so you do not burn your chocolate.

  7. Remove silicone liner from the freezer and pour chocolate into prepared crust.

  8. Return to the freezer to set the chocolate.

  9. Cut marshmallow down the middle and cut each piece into thirds.

  10. Once the chocolate is set, you can remove from the freezer and place marshmallows on top.

  11. Torch them for a yummier bite!

*Note: For store-bought substitutions, try 1 Keebler Mini Graham Cracker crust, 1 Ghirardelli chocolate square, and 6 mini marshmallows.
