Seligo's Polyphenols is made with heirloom Sicilian olive varieties (cultivars). They have adapted since millenials to the Sicilian biodiversity, never from intensive farming and always regenerative.
Our olives are grown on small family-run farms. We still practice the traditional hand-harvesting to protect the olives from damages, then cold-pressed by a master miller within 90 minutes of harvest for freshness and flavor.
