Product Details
Apricot Clouds French Pastry DIY Baking Kit
The dough gets grated straight onto the filled pastry before baking, so instead of a smooth top you get little ridges that crisp up individually while the apricot and vanilla cream underneath stays soft. An almond flower on top and a dusting of powdered sugar finish it off. Makes 8 to 10 pastries, about an hour of prep, 20 to 25 minutes in the oven. Best eaten within a couple days, kept cold.- Handheld sifter and a 3-inch round cutter for portioning the dough evenly before it goes into the pan.
- Dried apricots and apricot jam pre-measured together, so the filling is ready to fold into the pastry cream.
- Vanilla bean paste instead of extract, for flecks of real vanilla bean through the cream.
